Smoked Salmon Tartar
with Sour Wasabi Cream
serves two as light dinner, or 6 as a small appetizer

This recipe is a very quick and easy to make and is sure to dazzle all the newly minted sushi/raw fish lovers out there. The key to this dish is to buy good smoked salmon. If you have a Whole Foods near you, their Duck Trap River packaged smoked salmon works fine, as does their own label smoked salmon (it is, infact, the same). Do not use anything by Nova.

Mis en Place for Tartar:
1 4 oz package sliced smoked salmon
1 Tbs shallot finely chopped
1 Tbs extra virgin olive oil (EVO)
1 bunch fresh dill, 1 tablespoon finely chopped, the remainder saved for garnish
1 lemon

Chop the smoked salmon into a small rough dice. Combine in a bowl with the EVO, shallots and chopped fresh dill and mix until combined. To serve, use a 1 cup measure as a mold, and pack with the tartar. Turn out onto plate and garnish with a small sprig of dill, the thinly sliced lemon and paint (huh?) with the sour wasabi cream sauce.

Mis en Place for Sour Wasabi Cream Sauce:
1 Cup sour cream
1 Tbs mayonaise
1 tsp prepared wasabi (or more to taste)
salt to taste

In a bowl combine ingrients and whisk until well combined. Salt to taste. Use a squeeze bottle to paint the plate and the tartar with the sauce.
