Instructions
Rinse the It’s That Simple Pearl Couscous in cold water and drain, pat dry with a paper towel. Set it aside.
Start a pan over medium-high heat. Add the drained It’s That Simple Pearl Couscous to the pan to dry-fry any excess moisture off the couscous. This will make it the ideal texture. Add in the smoked paprika, a pinch of salt, and a generous squeeze of lemon. Stir well and set aside.
Add a drizzle of oil in the same pan and gently fry the garlic over medium heat. The leftover bits of paprika will add extra flavor to the oil.
Add the chopped chorizo and red pepper to the pan. Sauté the chorizo mixture until the peppers become soft and the chorizo gets brown and crispy.
Add your flavored It's That Simple Couscous back into the pan, along with the fresh chopped chili pepper, salt, and pepper to taste. Heat all ingredients together for a few minutes and finish with a generous squeeze of lemon and chopped parsley. This dish is best when enjoyed fresh, so serve immediately!
