Low-Carb Vanilla Orzo “Rice” Pudding

A warm, creamy orzo pudding lightly sweetened and finished with vanilla and cinnamon. Comforting, simple, and ready in minutes.

Instructions

  1. Prepare the Orzo:

    Rinse and drain the It’s Skinny Orzo under warm water for 15 seconds.


  2. Simmer the “Pudding”:

    In a small saucepan, combine the almond milk, sweetener, vanilla, cinnamon, and salt. Bring to a gentle simmer over medium heat.


  3. Add the Orzo:
    Stir in the drained orzo and let it simmer for 5–7 minutes, stirring occasionally, until the mixture thickens slightly and the orzo absorbs some of the flavor.

  4. Make It Creamy:
    Stir in the optional cream or coconut cream for a richer texture. Taste and adjust sweetness or spices as needed.

  5. Cool & Serve:
    Serve warm or let chill in the fridge for 30+ minutes for a cold pudding-style treat. Top with your favorite low-carb toppings.
