This dish is low-carb and keto-friendly, but it doesn't feel like deprivation! With plenty of yummy cheese and bright, fresh lemon, this is one to charm your date and seduce your taste buds.

Instructions

  1. Drain and rinse one package of It’s That Simple Fettuccine. Set it aside.

  2. Pat shrimp dry. Coat 5-6 large shrimp with flour. Heat the butter or oil in a large skillet over medium heat. Sauté the shrimp, onions, capers, and chopped basil until the shrimp just starts to turn pink and less translucent.

  3. Add the juice from ½ a lemon and the chicken stock to the pan. Stir the ingredients over medium-high heat for several minutes until they start to thicken. Add more butter if needed (stirring it into the piccata sauce).

  4. Add your It's That Simple Fettuccine pasta to the hot pan, tossing to combine the ingredients. Season generously with salt and pepper. Add half the grated Parmesan cheese. Cook until the noodles are heated through, 3-5 minutes.

  5. Serve up the shrimp piccata on a bowl or plate. Top the serving with additional Parmesan cheese, fresh basil, and lemon zest. Enjoy!
