Chicken and White Bean Soup

Instructions
Drain one package of It’s Skinny Angel Hair. Rinse and set it aside.
Chop the escarole. Slice the white onion and the garlic cloves. (Slice the chicken into smaller pieces, if needed).
Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the sliced chicken breast and sauté for 2 minutes. Add the sliced onions and garlic, and continue to sauté until the chicken is cooked through—about 10 minutes.
Add the escarole to your pot and cover it with a lid. Cook until the escarole has softened and wilted. Add the white beans and chicken stock. Allow the ingredients to heat through—simmering for a few minutes.
Add the It's Skinny Angel Hair to your pan. Gently stir to combine the noodles with the broth and ingredients. Add a generous amount of Parmesan cheese and continue to heat for 2-3 minutes until the noodles are heated through. Ladle up a hearty bowl of soup and enjoy!
