Family-Size Light Fried Rice

A lighter, veggie-packed fried rice that comes together fast and delivers all the flavor with fewer carbs.

Instructions
Cook the rice blend:
Prepare the entire It’s White Rice Blend bag according to package instructions – simmer in water for 5 minutes until tender. Fluff with a fork and set aside.
Cook the vegetables:
In a large nonstick skillet or wok, heat the oil over medium-high heat. Add garlic, carrots, bell peppers, and peas. Stir-fry for about 4–5 minutes until the vegetables are tender but crisp.
Add protein (egg and/or chicken):
For egg: Push veggies to one side, pour in the beaten eggs, scramble until just cooked, then mix together.
For chicken: Add cooked chicken and stir until heated through. Use both or either option depending on preference.
Combine rice and sauce:
Add the cooked rice to the skillet. Pour over the soy sauce and toss everything well to combine. Stir-fry for 2–3 more minutes until hot and evenly mixed.
Finish and serve:
Sprinkle with green onions and a dash of chili flakes or sriracha if desired. Serve warm and enjoy a filling, flavorful, and lighter version of a takeout favorite!

- Bell Peppers, Chopped (mix of red/yellow/green for color)
- Chopped Green Onions
- Low-sodium soy sauce (adjust to taste)
- Eggs, lightly beaten
- Chicken breast, cooked and diced
- Sriracha or chili flakes, to taste
