In the summer (or even in the winter), you don't want to spend hours in the kitchen working on a pasta dinner. No worries here—lemon asparagus fettuccine pasta takes about 5 minutes to pull together and delivers all the right flavor notes! Enjoy pasta night anytime!

Instructions
Drain and rinse one It's That Simple Fettuccine package and set it aside.
Use a vegetable peeler to shave five stalks of asparagus. Slice half a shallot, then zest and juice one whole lemon. Set aside the lemon juice until later.
Heat two tablespoons of olive oil in a medium skillet over medium-high heat. Add the shallot to the pan and sauté until translucent. Add the shaved asparagus and season to taste with salt. Add the lemon juice to the pan and sauté the lemon asparagus until tender—2-3 minutes.
Add the It’s That Simple Fettuccine pasta to the pan. Toss ingredients to combine and add about 1 teaspoon of the lemon zest. Let the pasta cook until heated through, approximately 2-3 minutes. Add most of the grated Parmesan cheese and toss to combine.
Dish up the lemon asparagus pasta. Garnish this dish with lemon zest and the rest of the Parmesan cheese. Salt and pepper to your preference, and enjoy!
