Low Carb Spicy Pork Stir Fry

This pork stir fry is a great lunch or dinner when you want something with some extra heat and flavor. This stir fry dish is also a great dish for getting in lots of vegetables.

Instructions
Drain and rinse one package of It’s That Simple Fettuccine and set aside. Prep your ingredients by thinly slicing the pork and covering it with 1 tbsp of sriracha. Let the pork marinate and chop your vegetables—chili, cabbage, Bok choy, carrots, scallions, and garlic.
Heat 1 tbsp of sesame oil and duck fat in a large skillet or wok over medium-high heat. Add the marinated pork strips and cook for a few minutes until they’re golden brown.
Add your vegetables and toss to combine. Stir the vegetables in the pan until they’re tender-crisp and the pork is cooked through (about 4 minutes). Add 1 ½ tbsp of soy sauce and 1 tsp of sesame oil (be careful—sesame oil is potent!). Toss to combine.
Add the It's That Simple Fettuccine to the pan and toss to mix. Squeeze the juice from ½ a lime into the pork stir fry and cook for 3-4 minutes until the Fettuccine is heated through. Dish up the spicy pork stir fry, top with additional sriracha sauce and the juice from the other half of the lime. Dig in and enjoy!

- Purple cabbage, sliced
- Carrots, diced
- Garlic, chopped/minced
- Duck fat
- Sesame oil
