This crunchy, salty, delicious dish is keto-friendly and low-carb. We included shrimp as a protein, but feel free to mix it up with your favorite. No matter how you do it, you’re going to adore pistachio pesto!

Instructions

  1. Drain and rinse one package of It's Skinny Spaghetti. Set aside.

  2. Place shelled pistachios, basil leaves, 1 tablespoon olive oil, and 1-2 tablespoons of grated Parmesan in a mortar bowl or food processor. Grind until well mixed to your desired consistency. Add half the lemon zest and mix.

  3. Add one tablespoon of olive oil to a large skillet over medium heat. Sauté the shrimp until they begin to turn pink (about 2 minutes). Add the pistachio pesto and two tablespoons of olive oil to the pan (be sure to add enough olive oil to create a sauce). Add It's Skinny Spaghetti to the pan and toss to combine.

  4. Dish up the pistachio pesto spaghetti and garnish with chopped fresh basil, parmesan cheese, and more lemon zest. Add a pinch of salt and black pepper to taste, and dig in!
