Healthy Fettuccine Alla Bolognese

Instructions
Dice carrot, onion, garlic, and pancetta.
In a large pan, sauté onion, garlic, and carrots with 2 tbsp of olive oil and a pinch of salt until tender, approximately 4 minutes.
Add pancetta and sauté until cooked.
Add ground beef, season with salt and pepper, and sauté until brown.
Strain ground beef, pancetta, and vegetables in a colander to drain the fat.
In a separate bowl, mix 2 cups crushed tomatoes, 2 tbsp tomato paste, and ½ cup wine.
Return beef to the pan and pour tomato mixture over the top. Add half of the parsley and cook on low to medium heat.

Top with Parmesan, chili flakes, and the zest of one lemon.

- 1/2 Cup Milk
- 1 Tablespoon Lemon Zest
- 1/4 Cup Parmesan, Grated
- 1/8 Teaspoon Salt and Pepper
- 1 Teaspoon Chili Flakes
- 2 tablespoons Olive Oil
